help..

there's no doubt that relocating my summer vegetables from my north facing garden to the south has been a success because i'm overrun with vegetables even though relatives, friends and neighbours have been keen recipients

every few days i'm picking half a dozen or more cucumbers
1-2 kilos of beans and tomatoes
several monster zucchinis
and 
i have about 20 eggplant ready to pick

free to a good home..pick up only!

  1. Jane, Becca the Intolerant Chef told me that you can grate zucchini and freeze it in meal sized portions. Of course, then you run into the issue of freezer space! Our cukes are done, but we're still picking beans and eggplants in large quantities - thankfully getting through most of it! :)

    1. thanks celia for your zucchini suggestion..i'm glad you are coping with your bounty..having a plentiful supply is a good problem to have rather than the reverse after all the hard work that goes into vegetable growing..x j

  2. Todays food is tomorrows food promise ;). If you are feeling up to a bout of preserving (and not hiding under the kitchen table in fear of all that produce ;) ) Here is a great recipe for excess zucchini...a nice base for a delicious lemon (or other citrus) curd...

    We just turned the first of our tomatoes into pasta sauce with onions, garlic, herbs and olive oil and just froze it. Tomorrows lasagne, ravioli, gnocchi and baked bean futures. Lots of eggplants on the plants and for our first gardening season we are stoked. Glad you have mates to take your excess...why not get a few friends in and do a mass preserving event over a nice cuppa (or 10) and everyone benefits? They could bring the jars, preserving Vacola pan etc. and you could provide the veggies for a cut in the results. Might make for a fun day? :)

    1. hi trts..thanks you for the link and your comments..it sounds as if you have been busy squirrelling away summers' bounty for winter..i plan to do the same next week and bottle a tomato puree that i use for all sorts of recipes throughout the winter..x j

  3. Well done Jane! Love your help sign, very creative! Having a glut is a good thing isn't it? I am sure you have made many wonderful things with your produce. If only we were closer we could share and swap :)

    1. yes jane..a glut is good..one of the joys of growing vegetables is being able to share with others, especially those who appreciate home grown produce, so i would love to be able to share and swap with you..x j
