cumquat jelly with candied cumquat peel

even though i have a continual supply of cumquats my cumquat culinary repertoire has been limited to making cumquat jam, brandied cumquats and adding them to poultry braises..i've had a few other ideas brewing and today i made cumquat jelly and candied cumquat peel..





cumquat jelly recipe
tea with hazel

ingredients

cumquats
100 gms sugar
200 mls filtered water
4 gold strength gelatine leaves
extra water
castor sugar

method

~ juice enough cumquats to get 300 mls of juice..put the skins aside 
~ make a sugar syrup with the water and sugar
~ cut gelatine leaves into quarters and soak in extra water until soft
~ squeeze the water from the softened gelatine and add it to the hot sugar syrup and stir until the gelatine has dissolved  
~ leave the sugar/gelatine mixture to cool and then add the strained juice 
~ check the jelly for sweetness and if needed add castor sugar to taste stirring well to dissolve
~pour into a mould or 4 individual glasses and put in the fridge until set

cumquat skins from the above recipe
1 cup  sugar
1 cup water
castor sugar

method

~ with a sharp knife scrape the membrane and pith from the inside of the cumquat skins
~ place the cleaned cumquat peel in a saucepan, cover with water and bring to the boil
~ boil for a few minutes and drain
~ dissolve the sugar in the cup of water and bring to the boil
~ add the cumquat peel, boil gently until transparent and then drain
~ place a layer of castor sugar on a baking paper lined plate and put the drained peel on the castor sugar turning each piece carefully to cover with sugar
~ remove the candied cumquat peel to a cake cooling rack, cover with a tea towel and leave to air dry
~ once dry store in an air tight container

    Glad you're back...I'm finding it hard to keep the blogging momentum too. I never was very organised or discliplined for that matter. Both recipes look gorgeous..especially the candied one.

  3. I am back again Jane...I love the look of the candied peel. Would it be good for Christmas baking such as fruit cakes or plum pudding as an alternative to mixed peel?

    1. hi jane..i've been wondering the same thing..i'm going to add some to a fruit cake to see what it's like..it doesn't have quite the bitterness of mixed peel so it may not have enough depth of flavour..i'll let you know how it goes..x

  5. thanks trishie..cumquat is a delicious fruit with quite complex flavours compared to oranges and mandarins but it tends to be a bit more limited in its use..that's why i made the jelly in order to try something different and in future i want to to try out a few more ideas that have been percolating..
